A few weeks ago a friend of mine recommended I replace my rice with cauliflower rice, I laughed! I didn't think I would like it at all.
They persisted so I finally gave in...let me tell you, I hardly even noticed a difference. PLUS, it's so much healthier for us.
FUN TIP: Next time you cook for your friends or family, replace rice with cauli-rice, but DON'T tell them. Lets see if they even notice, (and let us know.)
Here's the recipe...
Ingredients:
- 1 head of cauliflower
- 2 tbsp22 olive oil
- 1 small onion
- finely chopped
- ½ tsp jeera (cumin) seeds (optional)
Process:
Grate the cauliflower, or pulse in a processor, until it reaches a ‘cous cous’ consistency. In a frying pan, sauté the onions and the jeera in the olive oil until soft. Add the cauliflower and cook for about 5 mins on a low heat. This “rice” is very versatile and can be used for most meals. Adjustments may be needed to be made to recipes as the cauli-rice does not need water too cook, and does not do well under long cooking times so should be added at the end of most risotto’s, or paella etc.
