You'll Need:
- 1 red onion, finely chopped
- 1 tbsp olive oil
- 1 clove of garlic, finely chopped
- 1 small punnet button mushrooms (±200g)
- 1 medium aubergine (also called eggplant or brinjal)
- 1 red pepper, deseeded and chopped
- 1 yellow pepper, deseeded and chopped
- 3 zucchini (also called baby marrows or courgettes)
- 1 x 400g tin of whole tomatoes
- 1 handful fresh basil
- Salt and pepper
- 2 tbsp tomato paste
Instructions:
Step 01. Over medium heat, fry the onions and garlic in the olive oil until soft.
Step 02. Add button rest of the fresh vegetables and cook until soft.
Step 03. Add the tin of tomatoes and simmer over low heat for about 5 mins.
Step 04. Add the tomato paste and cook for another 15 minutes or so until the sauce begins to thicken.
Step 05. Once cooked, season with the salt and pepper and add the chopped basil before serving
