Recipe 01. Pork Fried Cauliflower Rice

Ingredients:

  •  1 Tablespoon bacon fat
  • 3 cloves of diced garlic
  • 1 sweet onion, chopped
  • 500 grams of ground pork
  • 1 cup of carrot, chopped
  • 3 Tablespoons of coconut aminos
  • 1 teaspoon of fish sauce
  • ¼ teaspoon of coarse ground black pepper
  • 2 large eggs
  • 4 cups of cauliflower rice (take a head of cauliflower that is raw chopped into pieces and placed food blender until it achieves the consistency of rice)
  • ½ chopped green onion

Method:

Step 1. add the ghee to a chinese wok or large pan and set at medium to high heat.

Step 2. add garlic and onions, leave it to saute for 3 minutes.

Step 3. add the ground pork and cook for 8 minutes, keep breaking and stirring big pieces to become even.

Step 4. Season with coconut aminos, the black pepper and fish sauce then stir in the carrots. Remove mix from the large pan or wok an leave it on the side in a container.

Step 5. Crack eggs and scramble for a minute. After this return the original mixture into the pan or wok then add the green onions and cauliflower rice. Cook for 5 minutes. Cauliflower should be soft but not mushy.

Serve and enjoy! This Banting recipe serves four people.

Recipe 02. Buttered Leek Quiche

Ingredients for the Filling

  • 8 lg eggs
  • ¼ cup of light coconut milk
  • ½ teaspoon of paprika
  • ½ teaspoon of sea salt
  • ½ teaspoon of black pepper
  • ½ teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • 2 leek stalks of quartered and thinly sliced, only use the white parts
  • 2 Tablespoon of cold grass-fed butter (such as Kerrygold), cut into small cubes

Ingredients for the crust

  • 1kg of potatoes that are shredded
  • 1 Tablespoon of melted ghee
  • ½ teaspoon of black pepper
  • ½ teaspoon of sea salt

Method:

Step 1. Preheat your oven to 220 degrees Celsius

Step 2. Season the potatoes with ghee, sea salt and black pepper. *Use cloth to get rid of excess water from the potatoes.

Step 3. Press the potatoes into a baking dish that is about 20 x 20cm big and the potato should lay about 3cm thick. Bakt this in the oven for 45min until the top is light brown.

Step 4. Reduce oven temp to 190 degrees celcius

Step 5. Add onion powder, garlic poweder, black pepper, salt, coconut milk, paprika and eggs into a large bowl.

Step 6. Whisk this mixture until its light and frothy. The leeks should then be added to this egg mix then stired.

Step 7. Mixture is then to be poured on top of the baked potatoes.

Step 8. Randomly place the cubed butter pieces on top of the mix and the baking dish back into the oven uncovered for 25min.

Step 9. Turn off heat and leave in oven for another 6 to 9 min.
Serve and enjoy!

Recipe 03. Steak Fajitas

Ingredients for the Marinade

  • 6 cloves of diced garlic
  • ¼ cup of extra virgin olive oil
  • ¼ cup of coconut aminos
  • 1½ teaspoon of cumin
  • 1 teaspoon of chili powder
  • ¼ cup of cilantro that is chopped
  • 2 limes Juiced and Zest
  • 1½ 700g of skirt steak
  • Sea salt
  • Black pepper
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large onion sliced
  • 2 jalapeños remove stems and seeds then cut into strips
  • 2 sliced avocados
  • 1 chopped beefsteak tomato
  • ¼ cup of cilantro, chopped

Method:

Step 1. Combine all ingredients shown in marinade section into a ziplock plastic bag along with the skirt steak. Make sure to press out the excess air while massaging the bag to ensure the marinade works into the steak. Put into the fridge for an hour.

Step 2. Pre Heat a iron pan over medium to high heat then remove your marinated steak while keeping the liquid from the bag.

Step 3. Season the steak gently with black pepper and sea salt. Now its time to put the steak on the frying pan and let it sear for 5min on each side.

Step 4. Cover the steak with foil and place it on the side leaving it to rest.

Step 5. Clean the pan and add jalapenos, onion and sliced bell peppers. Now grab the marinade used for the steak and add it to the pan, let the vegetables now saute in the marinade for about 5min.

Step 6. Turn off the heat, slice the steak into thin slices.
